Enchilada cook off

We recently hosted an enchilada cookoff - thanks to our good friend, Andrew, for staying on us to make this happen! It was a ton of fun, we had 5 couples over and 4 of us made enchiladas. There were two cream sauce (which most people were surprised about) and two red sauce. There was one ground turkey, two chicken and one beef so we had a good variety! I had made beans and rice thinking we would be hungry, but we were all stuffed after sampling 4 enchiladas. Oh well, I'll know that's not needed for next time. All of the food was delicious and we voted - it was very close and two ended up in a tie (one being mine or I should say, an adaptation of our friend, Leroy's). We didn't have a prize but everyone had fun, so we're thinking a chili cookoff or something different next time!
